Lunch: Waldorfish Salad

  • 1/2 cup grapes - 31
  • Balsamic vinagrette - 100
  • 2 tbsp gorgonzola cheese - 73
  • 1 tbsp slivered almonds - 39
  • 4 cherry tomatoes - 12
  • 4 cups red leaf lettuce - 18

Dinner: sauteed collards, grilled tofu and roasted broccoli

  • 1 1/2 cups collards (raw) - 16
  • 1 tsp olive oil - 40
  • 1/2 cup broccoli - 15
  • 6 cherry tomatoes - 18

Snacks:

  • 12 fluid ounces drip coffee - 4
  • 1 fluid ounce vanilla soy milk - 15
  • 1/4 cup peanuts - 207
  • Chocolate - 200
  • Greek yogurt with granola - 195
  • Tbsp granola - 45

Totals: 1,341/1,272 -___- I’m very annoyed that I went over today, even if it’s just 70 calories. I had about a 1/4 cup chocolate covered peanuts and I had no idea how many calories they were until after I had already eaten them! I still don’t really know, I just put in a quarter cup raw pretzels and some milk chocolate.

Exercise: At least I got in a solid workout today. Ran 3.5 miles and also did about 20 minutes of strength training. I also walked to school today because it was so gorgeous out, so that’s another 30 minutes of walking. 

All in all, not a bad day but still not one of my best.
