  • 1 1/2 cup chopped beets - 112
  • 3 cups raw collard greens - 32
  • 1 teaspoon EVOO - 40
  • 1/2 cup cooked cous cous - 88

Dinner: totchos

  • 12 tater tots - 214
  • 1/4 cup black and pinto beans - 57
  • 1/4 cup Daiya cheese, cheddar - 90
  • 1/4 medium sized avocado - 80
  • 1/4 cup chopped tomatoes - 6
  • 1/8 cup chopped red onion - 8
  • 1/4 cup shredded red leaf lettuce - 2

Snacks:

  • 1 greek yogurt - 100
  • 1 tbsp hempseed granola - 75

Exercise: ran 3 miles outside, walked three miles.

Totals: 1,222/1,272

I know totchos aren’t exactly the healthiest food but hey, I still stayed under my count and incorporated some veggies. I also got a pretty solid work out in.
