Breakfast: Toad in a hole. I got this out of an American Girl cookbook when I was little and I make it all the time. Punch the middles out of the bread and fry eggs in the middle. Mmm mm good.

  • 2 organic eggs - 140 calories
  • 2 pieces Dave’s killer bread lite, whole wheat - 130 calories
  • Butter, about 1/4 tablespoon - 25 calories

Lunch: Kale salad.

  • 2 cups raw kale - 66
  • 3 kalamata olives, halved - 38
  • One quarter of an avocado, mashed - 80
  • About 1 tbsp spicy hummus - 25
  • 2 tbsp crumbled feta - 50

Dinner: Apple and gorgonzola panini

  • Two pieces Dave’s Killer Bread Lite - 130
  • Half a small apple - 47
  • 2 tbsp gorgonzola - 73
  • Butter - 34

Snacks

  • 2 Greek Yogurts - 200
  • 2 tbsp Hempseed granola - 150
  • 1/4 cup grapes - 15
  • 8 Almonds - 62
Exercise
  • Ran 1 mile, walked about 1 more. I would’ve run more but I was with a friend who really wanted to walk. I was disappointed that my new running shoes didn’t get a better work out!
  • Jillian’s thirty day shred. I did a session because I didn’t get a good enough work out running/walking.
